It is a nutritious leafy vegetable that is consumed in the form of stir fries, soups, gravies, simmered dishes, daal, and curries throughout the country. Amaranth green leaves contain Vitamin A, Vitamin C, Vitamin B6 and B9, Riboflavin, Niacin, Calcium, Omega 3 fatty acids, Iron, Phosphorous, Magnesium, Zinc, Sodium, Potassium, Copper, etc.
- Consumption of these leaves brings various health benefits. Plant from mid-spring to early summer by sowing seeds barely covered with soil in uniform rows.
- Soil – choose a well-draining soil that is rich in organic matter.
- Water – Give regular water during the growing season and make sure the soil doesn’t dry out, especially the first few days.
- Sunlight – Amaranthus thrives in full sun, so select a location that receives at least 6-8 hours of direct sunlight daily.
